The French red porgy (Pagrus pagrus) is a fish of exceptional quality, renowned for its white, delicate and flavourful flesh. Caught by line fishing, this method of capture preserves the quality of the fish and guarantees impeccable freshness. With an average weight of 2 to 4 kg, it is ideal for professional cutting or cooking whole. This fish is prepared by our fishmongers at the Le Delas fish market in Rungis the night before the order is shipped, thus guaranteeing optimal freshness.
