The French dogfish (Scyliorhinus canicula) is a cartilaginous fish prized for its firm, flavourful flesh and lack of bones. With an ideal size of around 400g, it is easy to cook and perfect for individual portions. This fish is prepared by our fishmongers at the Le Delas seafood workshop in Rungis the night before the order is shipped, ensuring optimal freshness. Professional culinary uses: Dogfish is traditionally prepared in court-bouillon or in a sauce, such as American-style dogfish or dogfish in cider. Its flesh holds up perfectly when cooked and absorbs the flavours of sauces well. It can also be simply pan-fried or roasted and served with vegetables. Storage and preparation advice: This product is fresh and must be kept in the refrigerator. It is recommended that it be consumed quickly to preserve its taste qualities.
