The smelt (Osmerus eperlanus) is a small fish highly prized by professionals for its fine flesh and delicate flavour. Delas, your wholesaler in Rungis, has selected this fish for its quality. Like all the products from our seafood department, it is guaranteed to be fresh: the smelt is prepared on site on the day of delivery. Professional culinary uses: Smelt can be prepared in many ways.
