The weever, selected by Atelier Marée de Le Delas, is a small fish particularly prized by chefs for the delicacy and firmness of its flesh. Despite its unusual appearance, it is an essential ingredient in traditional seafood cuisine. Weighing around 100 g each, this wild-caught fish offers white, firm and lean flesh with a characteristic briny flavour that brings unrivalled aromatic depth to culinary preparations.
Professional uses, preparation and storage:
► Gastronomic applications: The weever is one of the essential ingredients in traditional bouillabaisse and high-quality rockfish soups. Its flesh, which does not fall apart during cooking, can also be filleted into small pieces to be served fried, as tempura or marinated in escabèche style. It adds body and a powerful flavour to fish stocks and reductions.
► Preparation: Whole wild fish. Caution: In professional kitchens, careful handling is required due to the venomous spines on the dorsal fin and gill covers (usually neutralised before sale, but constant vigilance is recommended when filleting). It is ideal for quick poaching or searing in a hot pan to crisp its thin skin.
► Storage: Fresh seafood that must be kept on ice in a refrigerated room at a temperature between 0°C and +2°C. To ensure the freshness and quality of the juices, it is advisable to prepare it immediately upon receipt.
