This skinless cod fillet (Gadus morhua) is a staple in professional kitchens. Appreciated for its pearly, flaky flesh and delicate flavour, it is perfect for individual portions. Each portion, weighing approximately 200 to 400g, is prepared in our Le Delas Tide workshop in Rungis on the day of dispatch for optimal freshness. Professional culinary uses: This cod fillet lends itself to many different preparations. Its flesh, which holds up perfectly when cooked, can be pan-fried, roasted, steamed or poached. It is ideal for daily specials or à la carte menus. It goes wonderfully with light sauces, seasonal vegetables or celery purée. Storage and preparation advice: As this is a fresh product, it must be kept in the refrigerator and consumed quickly. Freshness is guaranteed as it is prepared on the day of delivery, so it is recommended that you use it as soon as you receive it to enjoy its quality to the full.
