Caught in the cold waters of the North-East Atlantic, this haddock is transformed into a delicious smoked haddock after being carefully salted, prepared and smoked in the JC David workshops. Very well known in Norway, because haddock is the main ingredient of the famous Norwegian fish balls, it is also very popular in British gastronomy, in particular through the emblematic "Fish & Chips".

Building on a Boulogne tradition dating back to 1922, JC DAVID has mastered the time-honoured art of salting and smoking fish. Based in Boulogne-sur-Mer, its workshops continue to use traditional methods, notably slow smoking in coresses (oak-fired ovens), which gives the products their distinctive flavour. For trade customers, JC David offers benchmark products such as mild smoked herring, the first in its category to be certified Label Rouge, as well as haddock prepared to the highest standards, with or without annatto colouring. To complement this range of seafood preserves, the company also produces ready-to-eat dishes in jars, such as salmon lasagne or flaked pollock, combining natural ingredients with culinary excellence.
