Sea bream (Argyrosomus regius) is a fish prized for its pearly, delicate and firm flesh. Its delicate flavour is similar to that of sea bass. This fish, weighing an average of 2 to 3 kg, is ideal for generous servings. It is prepared by our fishmongers at the Le Delas fish market in Rungis the night before the order is shipped, ensuring optimal freshness. Professional culinary uses: The flesh of the meagre lends itself to many preparations. It can be roasted whole, cooked in fillets, pan-fried or grilled à la plancha.
