This fish is prepared by our fishmongers at the Le Delas seafood workshop in Rungis the night before the order is shipped, ensuring optimal freshness and quality. Professional culinary uses: Ray is a classic ingredient in French cuisine. Its delicate flesh lends itself to simple cooking methods that bring out its flavour, particularly meunière with brown butter and parsley. It is also delicious steamed or poached, and goes very well with capers, citrus fruits or purée. Storage and preparation advice: This product is fresh and must be kept in the refrigerator.
