The yellow horse mackerel, caught off the French coast, is a wild fish that remains all too little known, yet appeals to professionals for its flavour and firm texture. Recognisable by its golden-hued skin, this blue fish has a rich, flavourful and delicately briny flesh, similar to that of mackerel or sardine, but with a finesse all of its own. Selected in a fine size of 600g and over, it yields excellent fillets and lends itself to contemporary preparations, whether raw or cooked. This is an ideal opportunity to showcase sustainable French fishing on the menu.
Professional uses, preparation and storage:
► Gastronomic applications: Thanks to its firm flesh, which holds up remarkably well when cooked, yellow horse mackerel is perfect roasted whole in the oven with herbs, grilled on one side on the skin on a griddle, or prepared en papillote. Its high content of healthy fatty acids also makes it an exceptional choice for raw or semi-cooked cooking techniques: it is excellent when hand-chopped into a tartare, as a citrus-marinated carpaccio, or prepared ‘shime saba' style (salted then marinated in rice vinegar).
► Preparation: This large size makes filleting and deboning much easier during preparation. Its skin, thin and crispy after a quick sear, provides an excellent textural contrast on the plate.
