Professional uses, preparation and storage: ► Culinary applications: Amberjack is the fish of choice for raw preparations. Its firm texture and rich flavour make it ideal for sashimi, premium sushi, finely sliced carpaccio or tartares seasoned with yuzu and sesame oil. In hot cooking, it excels when simply seared on a griddle or roasted on one side, allowing it to retain a pearly, juicy centre.
