► Culinary applications: Amberjack is the fish of choice for raw preparations. Its firm texture and rich flavour make it ideal for sashimi, premium sushi, finely sliced carpaccio or tartares seasoned with yuzu and sesame oil. In hot cooking, it excels when simply seared on a griddle or roasted on one side, allowing it to retain a pearly, juicy centre. Its flesh also takes well to distinctive marinades (soya, ginger, miso).
► Preparation: Presented as a fillet, this product saves valuable time during preparation. The structure of its flesh facilitates clean cuts, whether for cutting regular steaks or producing very fine slices. To bring out its delicate flavour, avoid overcooking, which could alter its silky texture.
