This artisanal pure organic akitakomachi rice vinegar is mixed with kombu and sweetened to accompany sonomonos (vinegar dishes, usually a seaweed salad with cucumber and mackerel). It allows of course to marinate the mackerels. It is used like cider vinegar, in salad dressings for example, and can also replace white balsamic vinegar.
