Matured for 30 to 40 days in an enclosed place with a precise humidity level, the garlic cloves undergo a slow caramelization which makes them perfectly digestible, thus eliminating annoying odors and giving them a soft texture of candied fruit. Renowned for its health benefits, black garlic is known to contribute to the longevity of the Japanese. Its flavor is sweet and sour, fruity and has a balsamic aroma, rich in umami. It is eaten as is or minced to accompany meat, poultry and fish. It flavors omelettes, rice and fried noodles.
