This organic brown rice miso, crafted in Japan using traditional methods, is a fermented ingredient of great aromatic richness, selected by Le Delas. Unlike industrial versions, this miso is unpasteurised, thus preserving its active enzymes and its ‘living' character. Its balanced composition of whole soya beans and whole brown rice gives it a dark colour and earthy, malty notes, ideal for chefs seeking authentic, certified organic ingredients.
Professional uses, preparation and storage:
► Culinary applications: A true staple of fusion and Japanese cuisine, it is used to add depth to stocks, soups or stews. It is excellent as a base for marinades for grilled meat and fish, or for making sauces, complex vinaigrettes and compound butters. Its aromatic depth also allows you to create glossy, flavourful glazes on roasted vegetables.
► Preparation: To preserve its enzymatic properties and the subtlety of its aroma, it is advisable to add it at the end of cooking, having first diluted it in a little hot liquid, without bringing it to a prolonged boil.
► Storage: Store in a cool, dry place. As this is a live product, residual fermentation is natural. Once opened, it should be kept refrigerated and can be used for several months. If a thin white film (harmless surface yeast) appears on contact with the air, simply remove it before use.
