Certified organic, it is characterised by a complex flavour that is both tangy, like vinegar, and naturally salty, imparting a unique umami depth. Selected by Le Delas for its authenticity and exemplary composition—free from added sugars and artificial additives—this condiment is an essential technical ingredient for chefs specialising in fusion or plant-based cuisine.

► Culinary applications: This versatile condiment is ideal for enhancing sauces, dips, vinaigrettes and vegetable marinades. It can also be used to add a surprising tangy and salty note to cocktails or for quick pickling of root vegetables and early-season produce.
