This blend combines the nutty richness of perfectly toasted sesame with the briny freshness of Aosa, a Japanese seaweed renowned for its delicacy and rich umami flavour. This preparation not only adds a crunchy texture but also an elegant visual touch with its deep green hues, ideal for enhancing modern culinary creations.
Professional uses, preparation and storage:
► Culinary applications: These seeds are the perfect finishing touch for fish tartares, scallop carpaccios or tuna tatakis. In fusion cuisine, they enhance wakame seaweed salads, poké bowls or traditional miso soups. For a bolder touch, they can be incorporated into fine patisserie to add a salty, textured note to green tea ice cream, dark chocolate ganache or a reimagined crème brûlée.
► Use: Ready to use, they are mainly used as a ‘topping' (final sprinkling) just before serving to preserve their crunch and the intensity of the marine notes. They can also be incorporated into breadcrumbs or a seed crust for flash-frying fish fillets.
► Storage: Packaged in 500g bags, they should be stored in a cool, dry place, away from light to prevent the sesame oils from oxidising and the seaweed from discolouring. Seal the bag tightly after each use to maintain their crispness.
