This Tamari soy sauce, produced by Yamakawa in the historic Mino region, is an exceptional product resulting from a slow, traditional fermentation process. Aged for 30 months in wooden barrels, it develops a rare concentration of umami, enhanced by elegant woody and toasted notes. Unlike classic shoyu sauces, it is made without any added wheat, giving it a slightly denser texture and an intense dark brown colour. It is a condiment for haute cuisine that perfectly meets the requirements of gluten-free diets without compromising on aromatic depth.

► Culinary applications: Its richness in amino acids makes it the ideal companion for enhancing raw ingredients.
