Condiment made with Pinot Gris vinegar and concentrated must of white grapes from the estate vineyards. Aged in oak barrels, it develops a delicate sweet note and an intense taste with fruity aromas. Excellent ingredient for sauces, salad dressings and recipes such as sweet and sour onions, zucchini, peppers or cauliflower.

In the region of Venice, the Este family produces in its acetaie (vinegar) fine condiments, such as the emblematic Aceto Sopraffino, highly coveted by the European courts of the sixteenth century. This house has revived since 1994 the vinegar recipe of the Superintendent of the House of the Dukes of Este, archived since the Renaissance. According to the same technique and in the identical barrel model, it is aged with the same thermal amplitude. Signature of this vinegar factory, only the grapes from his vineyard, predisposed for the actification, enter the development of their wines and vinegars. Their system of production and ripening of wine products is based on a perpetual reserve, called "solera". Once a year, part of the contents of each cask is transferred to open barrels for oxygenation. Of course, these products are free of any additives (caramel, preservatives, colorants, thickeners ...).
