Professional uses, preparation and storage:
► Gastronomic applications: Thanks to its PAD preparation, this fillet is ideal for producing perfectly uniform roast beef, Chateaubriands or tournedos cut from the centre. Its melt-in-the-mouth texture lends itself admirably to rare or very rare cooking, enhanced by a simple deglazing or a more elaborate sauce such as a red wine reduction or a Périgueux sauce. It can also be prepared as a hand-chopped tartare or carpaccio to highlight the fineness of its fibres.
► Preparation: As this fillet is already trimmed, there is minimal waste when cutting. It is advisable to remove the meat from the fridge approximately 30 minutes before cooking to avoid a thermal shock that could cause the fibres to contract. For maximum tenderness, leave the meat to rest under aluminium foil after cooking for a duration equal to the cooking time.
