This French beef skirt is sold by the kilo (weight may vary considerably). The onglet is a distinctive cut, highly prized for its strong flavour. This whole cut is sold semi-trimmed, making it ideal for chefs who wish to finish the preparation themselves according to their specific requirements and for excellent yield. It is selected with care by Le Delas, a wholesaler in Rungis, and is prepared in our dedicated workshop by the Le Delas butchery teams.

The semi-trimmed skirt steak offers a wide range of uses and great freedom in preparation:
► Grilling and Pan-frying: Ideal for cutting into steaks for quick cooking over a high heat. Skirt steak is generally served rare or very rare for maximum tenderness.
► Signature Dishes: A prime cut for bistro dishes, traditionally served with a shallot or pepper sauce.
► Topping: Beef skirt steak, with its robust flavour, is perfect as a finishing touch on pasta dishes, gourmet fruit salads, Asian dishes, poke bowls...
► Custom Preparation: The semi-trimmed format allows the chef to control the final cut (portion size, trimming) according to the dish and the restaurant's technical specifications.
Storage and Preparation Tips:
► Storage: Fresh butcher's product. Store in a cold room (0°C to 4°C).
► Preparation: Finish trimming to remove any remaining connective tissue before cutting the piece. The flank should always be sliced perpendicular to the grain to ensure tenderness when served.
