Raised in the Piedmont Pyrenees, fed with whole grains and wild plants, this slow growing black pig offers a unique parsley flavor.

Bigorre's black Pork is the pure-bred autochthonous pig found in the central Pyrenees since immemorial times. Recognizable by its black robe and its horizontal ears, it grows free on its territory of origin, Bigorre, on the borders of the High Pyrenees, Gers and Haute Garonne, in a landscape of meadows and of undergrowth. Too fat, too slow, too unproductive, unsuited to intensive farming and industrial standards, it had become an useless and archaic animal. The Bigorre pork is reborn today thanks to the hard work of the Padouen collective and to the exceptional taste qualities of this same fat! It produces a very good quality fat due to a large amount of oleic and linoleic fatty acids. This good fat has many physiological advantages: anti-cholesterol, preventing cardiovascular diseases, actor of the immune system. In order not to distort its original qualities, the raisers make no concession on its conditions of breeding. Its exceptional meat is red, tender, juicy and intense. Traditional in Bigorre, the preservation of hams by drying in the open air is fostered by a microclimate alternating wet and dry phases, which confers to them their so peculiar character.
