Located in Aveyron at an altitude of 800 meters on the Monts de Lacaune, Les Salaisons Cros practice natural drying without added nitrites, in ideal conditions.
Salaisons Cros is a family business, originally breeders, created in 1936. A few generations and investments later, the Cros company has not lost any of its values while acquiring a certified cutting-edge production tool, of IFS higher level. Its hams manufacturing secrets have not changed: quality meat, sea salt and… time, without added nitrites! Salaisons Cros works with French pork from long-time partner breeders, the pieces are salted with dry salt while ensuring a limited salt intake. Drying and ripening take place under ideal climatic conditions, at an altitude of 800m and under the natural influence of the air from the Grands Causses natural park.
