► Gastronomic applications: These fillet hearts are intended for the most discerning tables. Their thickness allows for perfect control over cooking, from medium-rare to rare. They are ideal for a refined plated service, accompanied by a port reduction, truffle butter or a seasonal garnish.
► Preparation: Thanks to individual vacuum-sealed packaging, you only need to remove the number of pieces required for your service. It is strongly recommended to remove the meat from its pouch 15 to 20 minutes before cooking to allow the fibres to relax and the meat to re-oxygenate. Sear vigorously on each side to sear the meat, then be sure to let it rest before plating.
