This 1 kg bucket of DAWN brand glucose syrup is a purified, concentrated aqueous solution of saccharides obtained by hydrolysing starch (corn and wheat). It has a dextrose equivalent of around 40. This syrup is clear, has a slightly sweet taste and is essential in baking for its anti-crystallisation and moisture retention properties. It is suitable for vegetarian, vegan, halal and kosher diets.

Glucose syrup is an essential technical ingredient for pastry chefs, chocolatiers and ice cream makers:
► Pastry and confectionery: Used to prevent sugar crystallisation in confectionery, fillings, icings and caramels. It gives elasticity and melt-in-the-mouth texture to preparations.
► Ice cream and sorbets: Added to sugar syrups to improve the texture, body and stability of ice cream and sorbets, reducing the formation of ice crystals. The recommended dosage is a maximum of 160 g/kg of finished product.
► Preservation and Moistness: Contributes to the moistness of baked goods and the preservation of pastries by acting as a humectant.
► Dosage: Maximum 200 g/kg in confectionery, fillings and coatings.
► Storage: Store in a cool, dry place.
