Calcium Chloride (E509) 1kg tube from LOUIS FRANÇOIS: The Techno-Gastronomy Additive
This product is Calcium Chloride (CaCl2) under the designation E509, presented in the form of odourless white flakes of mineral origin. It is packaged in a 1kg net plastic tub. Delas offers this calcium chloride to provide catering and pastry professionals with an essential additive in techno-gastronomy, particularly for spherification techniques. It allows for the rapid addition of free calcium to a liquid medium.
Properties/Mode of action:
► Highly soluble in water and ethanol.
► Provides free calcium quickly, reacting in particular with alginates.
Culinary uses (techno-gastronomy):
► Mainly used in spherification (direct or inverse) in combination with alginate, enabling the production of liquid pearls or spheres (mango pearls, for example).
► Used as a food additive (E509) at a Quantum Satis dose (sufficient quantity) in various food categories (ice cream, confectionery, bakery products, desserts, processed fruit and vegetables).
► Used in beer and as an additive to peeled or unpeeled tomatoes.
► Composition and purity: Minimum purity of 77% CaCl2. Contains approximately 27,000 mg of calcium per 100 g.
► Diet: Halal, Kosher, Vegan and Vegetarian compatible.
Storage: Store in closed packaging, away from heat, direct sunlight and humidity in a well-ventilated place.
