This 1 kg Marguerite crystal glucose syrup is a transparent liquid sugar, perfect for professional pastry chefs. It provides excellent binding, prevents deformation of cooked sugar, and has an anti-crystallizing effect, allowing higher solids without sucrose crystallization. It adds elasticity and malleability for translucent sugars, ice creams, and nougatine. Selected by Ledelas.
Culinary uses:
Perfect for pulled sugar, wedding cakes, ice creams, nougatine, and cooked sugar preparations. Dosage: 350 g per 1 kg sugar for pulled sugar, 100 g per liter of milk for ice cream, 500 g per 1 kg sugar for nougatine, 250 g per 1 kg sugar for wedding cakes.
Storage and preparation advice:
► Ready to use; handle with damp hands to avoid sticking.
► Store at room temperature, away from moisture and heat.
► Reseal tightly after use.
