A sweetener for your formulations, this dextrose monohydrate, derived from corn or wheat starch, is an essential technical ingredient for baking, ice cream making and brewing. Its high minimum purity of 99.5% (on a dry basis) and its white crystalline powder form make it a valuable ally. ► It has a very high reducing power and is directly assimilable by yeasts, making it an excellent improver for the rise, colouring (browning) and shelf life of your bakery and pastry products (recommended dosage 5%). ► In ice cream and sorbets (dosage of 3 to 5%), it is essential for lowering the freezing point, improving texture and preventing crystallisation. ► In confectionery, this dextrose acts as an anti-crystallising agent for sucrose and an enhancer of fruit flavours, while providing a sensation of freshness in the mouth. ► It is also used in charcuterie to stabilise emulsions. The product is packaged in 1kg tubes and must be stored in a cool, dry place for a shelf life of 24 months. It is certified Halal, Kosher, Vegan and Vegetarian.
