This powdered preparation is a base for making pastry creams and hot-cooked creams. Its simple formula is mainly composed of corn starch, flavourings (including vanilla flavouring) and colourings. This base, selected by Le Delas, a wholesaler in Rungis, is intended for professional use, offering speed and consistency in the production of pastries. It can be used to prepare light or economical creams simply by mixing it with milk, sugar and, if desired, eggs.

This Pastry Cream Base is an essential ingredient in many pastry preparations:

Storage and preparation tips:
► Storage of uncooked product: Store in a cool, dry place. Close the bag tightly after use. Best before 30 months.
► General instructions for use: Mix the powder with the sugar and dry ingredients (and eggs, if using). Mix in some of the cold milk. Pour in the rest of the boiling milk. Bring back to the boil and cook for 2 minutes, stirring constantly.
► Storing the mixture: Consume quickly after preparation.
