Le fumoir has been specialising in smoked salmon since 1996. Its 350m2 laboratory is located in the Ile-de-France region, in Combs-la-Ville. Its experienced staff master and pass on the traditional process of salmon smoking. Quality, respect for tradition, natural resources and the environment are at the heart of their concerns. Their salmon arrives fresh and of the highest quality, hand-salted with dry salt, then smoked with beechwood shavings, respecting the resting and maturing times required to produce a high-quality artisanal product.
