Raised in the wild fjords of the Faroe Islands, this salmon benefits from an unspoilt environment where strong ocean currents ensure pure, cold water. L'Atelier d'Angresse works with a breeder who respects the natural cycle of the fish and their diet, particularly those of superior marine origin. The low density in the tanks means they can grow in optimum conditions. The very strong marine currents provide water of exceptional quality. GMO and antibiotic-free, this salmon is smoked using their traditional beechwood method. Fatter than Scottish salmon, it has an exceptional melt-in-the-mouth texture and a more delicate smoked flavour.
This smoking workshop in the Hossegor region processes the finest fish, using only Guérande salt and beechwood.
The Angresse workshop supplies salmon reared in the waters of the Orkney and Shetland Islands in Scotland and on a farm in Western Ireland at a particularly low density. Their diet is balanced, GMO-free, with a marine component from certified sustainable wild stocks and biological pest control. To bring out the very best, our teams have developed a special smoking and maturing technique, combining age-old traditions with the quest for perfection. It involves a rigorous selection of fish and ingredients (Guérande salt and beechwood), manual work without freezing from one end of the process to the other, and smoking and maturing according to an exclusive recipe, giving the fish time to reveal all its flavours.
