Pont-l'Évêque is a soft cheese with a washed rind. Before staying in the cellar (from the 3rd to the 7th week), it is first salted then placed in the ripening room (where it is turned manually every day then washed). It will thus obtain a pretty amber tint.
On an oceanic land of 35 km² that one would think made for dairy production, a traditional cooperative which belongs to the producers and works their fresh milk according to the rules of the art.
The Isigny-Sainte-Mère Cooperative works only over a geographical collection area of 35 km² in the Cotentin and the Basin around Isigny-sur-Mer. From an opulent herbage vintage, a veritable “butter and cream fountain” linked to rich and fertile soils (alluvium, 170 days of rain per year ideally distributed, mild temperatures in summer and mild winters). The result is a milk rich in mineral salts, trace elements and oleic fatty acids. The dairy belongs to the producers and processes the milk collected within 48 hours in a traditional way.
