L'Écrou du fromager is a farmhouse goat's cheese with an original hexagonal shape, produced by GAEC des Alpines in Normandy. Moulded from raw whole goat's milk and matured using traditional methods, this cheese is distinguished by its silvery ash coating and central hole, reminiscent of a nut. In addition to its originality, its shape makes it very easy to cut into portions when serving.
Its white to ivory-coloured paste, which is slightly tangy, reveals clean, balanced goat's milk aromas that become more intense with ripening. Its texture, which is fresh at the outset, becomes firmer over time, depending on humidity conditions.
A cheese with character that combines terroir, aesthetics and originality.
Culinary uses:
Écrou du fromager is ideal at the end of a meal, presented on a cheese platter, or cut into original individual portions. It also adds a striking visual touch to buffets or cheese plates in restaurants.
