Mimolette Vieille is a pressed cheese made from pasteurised cow's milk, matured for at least 12 months. This long maturing period gives it its characteristic semi-hard to hard texture. Produced by the Isigny Sainte-Mère Cooperative (milk sourced in France), this Mimolette is distinguished by its fruity and slightly salty taste, as well as its orange colour (due to a natural colouring agent called annatto) and its natural light brown rind.
Selected by Le Delas, it is presented here in irregular chunks, which are practical for both cooking and serving on a cheese platter.
Culinary uses and storage:
► Use: Ideal for cheese platters where its "aged" character is appreciated, diced as an appetiser, grated in dishes (omelettes, gratins) or in sandwiches.
► Storage: Fresh product. Store between +2°C and +8°C. Once opened, consume within 7 days, subject to proper storage conditions.
