Storage and preparation advice:
► Store in refrigerator between 0°C and 4°C
► Remove 1 hour before cooking to temper the poultry
► Recommended cooking: 180°C, allow 20 minutes per 500g
► Baste frequently during cooking to maintain tenderness
► Check cooking with a core thermometer (minimum 75°C)

Gauloise Blanche de Bresse breed, an old and rustic breed with slow growth, Bresse poultry is a hunter and muscular poultry that lives outdoors in large spaces. Its diet is healthy and natural, including 1/3 of food found outdoor, sustained with dairy products and high quality cereals during a fattening last period. It guarantees a tender and melting flesh that effortlessly detaches from the bones, but nevertheless firm, juicy and marbled. Its skin is fine and pearly. Bresse poultry is known for the generosity of its flesh, with long and wide fillets, plump drumsticks, and thin bones.… For the enf of year celebrations, the most experienced breeders swaddle Bresse hens and capons, bringing this poultry to the rank of a work of art, by improving their presentation and foster the infiltration of the tasty skin fat.
