Professional uses, preparation and storage:
► Culinary applications: Chicken livers are essential for making mousses, terrines and ‘homemade' chicken liver pâtés. In hot catering, they are perfect for making Landes-style salads, chicken livers glazed with raspberry vinegar or served on skewers. Their melt-in-the-mouth texture also makes them ideal for creating creamy sauces or delicate stuffings for other poultry.
► Preparation: For the best flavour, these livers must be cooked through. Their delicate texture requires a quick sear over a high heat to retain a tender centre without drying them out.
► Storage: A fresh product to be stored between 0°C and +4°C. Thanks to its one-kilogram vacuum-packed format, it allows for precise management of the raw material and minimises waste.
