This free-range chicken bears the prestigious Label Rouge, a guarantee of extensive free-range rearing and a carefully selected diet. Presented in a ready-to-cook (RTC) format, this large chicken (2 kg and over) guarantees optimal yield for the catering trade. It is a centrepiece for chefs wishing to highlight traceability and French butchery expertise within their establishment.
Professional uses, preparation and storage:
► Gastronomic applications: Its generous size and superior quality make it the ideal cut for traditional roasting on a rotisserie or in the oven. Once browned, its skin becomes particularly crispy whilst keeping the meat tender. This free-range chicken is also superb when cut into a ‘crapaudine' style for grilling, or prepared in cut-up pieces for stews such as chicken chasseur or coq au vin blanc.
► Preparation: Thanks to its PAC preparation, this product saves a significant amount of time during preparation. The 2 kg and above size is particularly suitable for table d'hôte meals or carving service for several guests.
► Storage: Fresh product to be stored between 0°C and +4°C. Available individually or in boxes of 6, it allows for flexible stock management. Available in our dedicated poultry butchery at Le Delas in the Rungis International Market, the hub of professional gastronomy.
