Made from wild hake, commonly known as pollack (Pollachius virens), caught in the cold waters of Scotland, this skinless smoked fillet comes in a professional 3kg pack. Prepared 'haddock style' (smoked and naturally coloured with annatto), it has a typical orange colour and a balanced smoked flavour. The fillets are carefully layer packed to preserve their integrity when thawed. Marée Le Delas buyers have selected it for its quality, excellent shelf life and delicate flavour.
