Professional uses, preparation and storage:
► Culinary applications: Its dense, pearly flesh excels in braised dishes, monkfish roasts wrapped in bacon or seafood casseroles. It withstands long cooking times in sauce, such as in a monkfish à l'armoricaine, without falling apart, whilst remaining flavourful when served as simply seared medallions.
► Preparation: To preserve the texture and flavour of the product, slow defrosting in a refrigerated environment between 0°C and +4°C is strongly recommended. Once defrosted, pat the piece dry thoroughly before searing over a high heat or poaching.
► Storage: Frozen product to be kept at a temperature of -18°C. Its packaging allows for strict stock management and year-round availability for your seasonal menus.
