These peeled skate wings, without skin, are presented with their cartilage, a format prized by restaurants for its ease of use. The wings are individually quick frozen (IQF). The wings weigh between 100 and 400g each. These wings come from skates (Raja spp) caught in the North-West Atlantic Ocean (FAO 21) using trawl nets, and the product originates in Portugal. Delas has chosen these skate wings to offer professionals a white fish with delicate flesh and a subtle taste, already prepared and graded. The frozen packaging guarantees a long use-by date, loss-free portion management and optimal flexibility in stock management. Culinary uses and storage: ► Use: Skate wing is famous for use in the preparation of skate with brown butter (beurre noisette and capers), but can also be poached, steamed or braised.
