Product description:
This frozen, desalted cod with skin (Gadus morhua), from the Nigel brand, comes from sustainable fisheries in the cold waters of the North Atlantic. Prepared in Portugal using traditional methods, it has undergone a controlled desalting process before being frozen, ensuring a balanced salt content and a firm texture. Presented in standardised 200/250 g pieces, it allows chefs to skip the time-consuming desalting stage in the kitchen whilst retaining the authenticity of this fine product. Le Delas has selected this product for its consistency and high nutritional quality, being rich in protein and low in fat.
Culinary uses, preparation and storage:
Thanks to its ready-to-cook format, this cod lends itself to a wide range of culinary interpretations:
► Traditional cuisine: Perfect for making the iconic Bacalhau à Brás, homemade cod fritters or a creamy brandade.
► Modern cooking: Its skin allows for single-sided grilling on a hotplate to achieve a contrast between crispy skin and flaky flesh. It can also be poached at a low temperature in flavoured olive oil.
► Pairings: Pairs perfectly with Mediterranean flavours: garlic, thyme, roasted peppers, black olives and new potatoes.
► Preparation: Defrost the product in the fridge at between 0°C and +4°C before use. Never refreeze a defrosted product.
► Storage: Frozen product to be stored at -18°C. The 5 kg cardboard box containing 1 kg units makes portion management easier in a professional setting.
