Gendarme d'Alsace is a distinctive regional charcuterie speciality, recognisable by its rectangular shape obtained by pressing and its intense smoking. Pierre Schmidt offers a superior quality version, free from glutamate, made from coarsely minced pork (68%) and beef (32%), both sourced in France. Smoked and cooked, this sausage is traditionally sold in pairs (approximately 130g per pair). This 1kg format (approx. 16 pieces) is ideal for catering professionals who want to add a touch of Alsatian authenticity to their menus. Selected by Le Delas, this product combines a high protein content (20%) with an inimitable woody flavour. Culinary Uses and Preparation Tips: Gendarme sausage is particularly versatile in professional kitchens: ► It can be enjoyed cold, cut into small pieces or thin slices, and is perfect for aperitifs, charcuterie boards or snacks. ► As a complete dish, it adds flavour to sauerkraut or vegetable stews. Add it about 20 minutes before the end of cooking. ► Reheat individually: 15 minutes in simmering (not boiling) water. Store between 0°C and +4°C. Consume quickly after opening the tray.
