An exceptional pepper produced in limited quantities on a mountainous island in southern Vietnam, hand-picked and sorted before being slowly sun-dried.
Pepper growing was introduced to the island of Phu-Quoc by the Chinese in the 19th century, and the practice was widely developed during the French presence in Indochina. Production levels remain carefully restricted (less than 1% of total Vietnamese production).
Its traditional production methods are entirely manual and involve no added chemicals, making this peppercorn a truly special find. The harvesting and separation of the peppercorns are performed by hand, seed by seed. The first sorting is carried out after the peppercorns are washed in spring water from the mountains of Phu-Quoc; the peppercorns are then dried on mats in the sun for 2 - 3 weeks. A final sorting ensures that only peppercorns which have retained their outer coating are reserved for sale. Finally, the peppercorns are dried for 2 months in the dark in order to ensure a humidity rate below 10%.
The extended sun drying process is what enables the development of this pepper's particular aromatic profile, with its distinct spicy, woody, fruity and briny aromas. The peppercorns give off intensely flavourful notes that pair marvellously with meat, raw vegetables and salads.
