Cassoulet with duck confit tin 1/2 MICOULEAU
104015
The iconic dish of the South-West, served as a single portion
Produced in the heart of the South-West in Beaumont-de-Lomagne, this traditional cassoulet from Maison Micouleau embodies the artisanal expertise of the region's gastronomy. Prepared without preservatives or colourings, this slow-cooked dish combines duck confit drumettes (15 per cent), authentic Toulouse sausages (21.5 per cent) in natural casings, and melt-in-the-mouth white beans steeped in a stock made with vegetables, herbs and spices. It offers a generous and authentic ready-to-serve solution, ideal for enhancing regional menus in the out-of-home catering sector (RHF), brasseries and catering services, or for retail sale.
Professional uses, preparation and storage:
► Culinary applications and front-of-house service:
> Direct serving and browning: Reheat the unopened tin for 10 to 15 minutes in a bain-marie of boiling water. For a traditional, crispy finish in a cassole or individual terrine, pour in the contents, sprinkle with breadcrumbs and brown for 5 to 10 minutes in a hot oven at 200 °C.
> Accompaniments and pairings: Serve with a crisp green salad dressed in a light vinaigrette to balance the richness of the dish, accompanied by country bread and ideally paired with full-bodied red wines from the South-West (Cahors, Madiran).
► Benefits for the kitchen and stock management: Individual 420 g portion guaranteed for one person, allowing for strict control of portion costs without waste, quick reheating times and consistent artisanal quality even during peak periods. Selected by Le Delas.
► Size and packaging: 1/2 metal tin, 420 g net. Packaged in cartons of 12 tins.
► Storage and shelf life: Store before opening in a dry, cool place (best before 4 years). Once opened, keep refrigerated and consume within 48 hours.
