The pistachio oil selected by Le Delas is a refined blend of virgin and refined oils, offering a perfect balance between aromatic intensity and stability. Its smooth, amber-green colour releases characteristic notes of the nut, which are both sweet and lingering. It offers a complex flavour profile, ranging from honeyed notes to a subtle hint of balsamic vinegar.
Professional uses, preparation and storage:
► Culinary finishing: Perfect for enhancing the delicacy of a tuna tartare, duck carpaccio or lightly seared prawns. It adds a unique aromatic depth to grilled fish dishes.
► Creative dressings: It pairs perfectly with balsamic or raspberry vinegar when making vinaigrettes, to dress salads of baby leaves or endives, beetroot or spring asparagus, giving them a gourmet and original twist.
► Pastries and desserts: Pastry chefs use it directly in cake batters, financiers, tarts or mousses to intensify nutty notes and impart a refined creaminess.
► Use: The ultimate finishing oil, it is ready to use. It is strongly recommended not to use it for frying and not to exceed a temperature of 180°C in order to preserve its organoleptic qualities.
► Storage: This product should be stored at room temperature, away from light and any source of heat. Close tightly after use to minimise oxidation. For optimal freshness, it is advisable to consume within 6 months of opening.
