This frozen purée is made exclusively from Adour kiwis, which hold Protected Geographical Indication (PGI) status. Grown in the Adour basin using rigorous expertise, these Hayward variety fruits are harvested at full ripeness to guarantee a high sugar content and intense flavour. Maison Ponthier transforms these exceptional kiwis into a purée with a vibrant pale green colour, with no added sugar, colourings or preservatives. Selected by Le Delas, this product retains the fruit's natural small black seeds, offering an authentic visual signature and a texture characteristic of fresh fruit. It has a Brix level of 12, ensuring perfectly balanced acidity.
Professional uses, preparation and storage:
► Pastries and desserts: Its natural colour and the presence of its seeds make it the ideal ingredient for creating mousses, bavarois or distinctive glazes. It gives your creations an instant ‘homemade' look and pairs perfectly with exotic fruits or red berries.
► Sorbets and ice cream: This 100% fruit purée is the perfect base for making ‘full-fruit' sorbets with a vibrant flavour. The seeds provide a delightful visual contrast that highlights the natural quality of the product selected by Le Delas.
► Snacks and plated desserts: Used as a topping or incorporated into verrines, it offers a burst of flavour and a polished aesthetic. It enhances fresh fruit salads and artisanal dairy-based desserts.
► Mixology: Highly prized by bartenders, this Adour kiwi purée allows you to create signature cocktails or mocktails with a bright, textured appearance, guaranteeing the authentic flavour of the Landes region.
► Preparation: To preserve the integrity of the flavours and the vibrancy of the colour, thaw in the fridge at between +2°C and +4°C for 24 to 48 hours. Shake well before use to homogenise the pulp and distribute the seeds evenly.
► Storage: Keeps for 30 months at -18°C. Once thawed, the product can be stored between +2°C and +4°C for 15 days. As with all Le Delas ranges, never refreeze a product once it has been thawed.

It sources exceptional, rare and exclusive fruits, picked at peak ripeness and gently processed shortly after harvesting. It supports the gastronomic community with its creations and innovations. Certified B Corp, one of the most stringent social and environmental labels, Ponthier will switch to using French-sourced beet sugar in June 2024 to reduce its carbon footprint. Ponthier coulis and purées are made from fruit sourced from carefully selected varieties, harvested according to their stage of ripeness, with no colourings or preservatives. Both fresh and frozen purées are used in desserts, ice creams or sorbets, jams, fruit jellies, coulis, glazes, as well as in cocktails, smoothies, milkshakes and slushies... The coulis, whether fresh or frozen, can be used to decorate plates, alongside cakes, on ice cream, mixed with yoghurt, or in fruit salads. These fruit bases are ideal for cooking, laboratory work and, of course, baking. Their resealable packaging allows for easy portioning and optimal protection against bacteria.
