This frozen purée, carefully selected by Le Delas, is made exclusively from Alphonso mangoes sourced from the Ratnagiri region of India. Renowned amongst professionals for its exceptional quality, this variety is harvested at peak ripeness when its skin turns orange-yellow and its aroma is intense. Maison Ponthier offers a version with no added sugar, guaranteeing a smooth texture, a complete absence of fibre and a vibrant saffron colour. With a Brix level of 18, this 100% fruit purée offers natural aromatic intensity and a lingering finish that will enhance even your most demanding creations.
Professional uses, preparation and storage:
► Pastry and confectionery: The absence of added sugar allows for total control over your recipes. It is a perfect technical base for making ganaches, fruit jellies, mousses or exotic fillings requiring the aromatic power of Alphonso mangoes.
► Sorbet and ice cream: This purée is ideal for making ‘full-fruit' sorbets of great finesse. Its smooth, fibre-free texture ensures even expansion and a remarkably creamy texture when churned.
► Fine dining: In savoury dishes, it lends itself to the creation of sweet-and-sour sauces, chutneys or reductions to accompany scallops, shellfish or duck breast, adding a refined tropical note.
► Mixology and beverages: A must-have for signature cocktails, smoothies or lassis, this purée offers a healthy and natural base, rich in the flavours of the Indian terroir selected by Le Delas.
► Preparation: To perfectly preserve the fruit's organoleptic profile, defrost in the fridge at between +2°C and +4°C for 24 to 48 hours. Shake the container well before use to ensure the pulp is evenly mixed.
► Storage: Keeps for 30 months at -18°C. Once thawed, the product can be stored at between +2°C and +4°C for 15 days. As with all Le Delas products, never refreeze a product once it has been thawed.

It sources exceptional, rare and exclusive fruits, picked at peak ripeness and gently processed shortly after harvesting. It supports the gastronomic community with its creations and innovations. Certified B Corp, one of the most stringent social and environmental labels, Ponthier will switch to using French-sourced beet sugar in June 2024 to reduce its carbon footprint. Ponthier coulis and purées are made from fruit sourced from carefully selected varieties, harvested according to their stage of ripeness, with no colourings or preservatives. Both fresh and frozen purées are used in desserts, ice creams or sorbets, jams, fruit jellies, coulis, glazes, as well as in cocktails, smoothies, milkshakes and slushies... The coulis, whether fresh or frozen, can be used to decorate plates, alongside cakes, on ice cream, mixed with yoghurt, or in fruit salads. These fruit bases are ideal for cooking, laboratory work and, of course, baking. Their resealable packaging allows for easy portioning and optimal protection against bacteria.
