Elegant and original, this fricassee combines the finesse of prawns (Litopenaeus vannamei) and scallops (Argopecten purpuratus) with the tangy freshness of yuzu and the subtle character of ginger. A creamy sauce made with light cream, white wine, mandarin purée and lemon juice enhances the exotic, iodine notes of this dish. Wakame is added for a refined Asian touch.
Packaged in 3.2 kg trays, this ready-to-use preparation is ideal for top-of-the-range catering, buffets or festive events.
Culinary use: Serve hot as a gourmet starter (12 to 14 portions) or main course (10 portions), accompanied by fragrant rice, fresh tagliatelle or crunchy vegetables. Easy to reheat in a bain-marie or traditional oven.
Preparation time:
► Bain-marie: 30 min in original packaging.
