This distinctive cheese, authentic to the Salers region, is produced using traditional French expertise and benefits from a Protected Designation of Origin (PDO) with strict rules. Delas has chosen this Salers PDO made from raw milk by L'EMPEREUR for its quality and character. It is a firm, pressed, uncooked cheese, matured for a minimum of 90 days. The use of raw cow's milk gives this Salers a full-bodied taste and an authentic regional flavour that lingers on the palate. It has a typically fruity aroma, and its thick, golden natural rind is covered with red and orange spots, evidence of expert maturing.
This 1.2 kg format is perfect for establishments that use this cheese in cooking and for catering platters.
