Fourme d'Ambert, a French PDO blue cheese, is produced in the mountainous region at the heart of Auvergne-Rhône-Alpes (Puy-de-Dôme, Cantal, Loire) between 600 and 1,600 metres above sea level, using milk from cows fed exclusively in this area. Recognised as an AOC since 1972 and then an AOP, it is distinguished by its soft, creamy texture and its subtle, delicate flavour derived from the richness of its terroir. The company L'EMPEREUR (Marcel Charrade Group), located in the Auvergne Volcanoes Regional Nature Park, matures it for a minimum of 28 days, in accordance with tradition.
This cheese, selected by the Crèmerie et Fromages Le Delas workshop in Rungis, is characterised by:
► its rind: greyish, thin, dry, bloomy, with white and red mould.
► its paste: fatty, cream-coloured, soft and creamy, with little mould.
► its taste: very mild and fruity, distinctive, sometimes tangy, making it a relatively mild blue cheese.
Culinary uses and storage:
► Culinary uses: it can also be used in cooking to add a creamy, blue-cheese flavour to meat sauces, veloutés, or hot dishes (tarts, quiches).
► Ideal for your cheese platters.
► Storage: Fresh product. Store at a temperature between +4°C and +8°C.
