Petit Bleu de Montagne L'Empereur 250g from CHARRADE: Creamy Blue Cheese
This mild cheese is a Petit Bleu de Montagne, an unpressed, uncooked blue cheese made in France from pasteurised cow's milk known as mountain milk.
Delas has selected this cheese for its BOFafin workshop in order to offer professionals a moderately flavoured blue cheese alternative, renowned for its creamy texture and delicate taste, making it easy to incorporate into dishes or on a cheese platter.
Organoleptic and Technical Characteristics:
► Type of cheese: Blue cheese, made from pasteurised cow's milk.
► Origin: France.
► Rind: Uniform, white (Penicillium candidum).
► Veining: Evenly distributed, blue to light green in colour.
► Taste: Refined, fragrant and delicate ("moderately strong"), with a soft and creamy texture (neither runny nor chalky).
► Shape: Cylindrical (7.8 cm in diameter, 6.5 cm high).
► Fat content/finished product: Minimum 27% (55% on dry matter).
Storage: Between 0°C and +4°C until the use-by date indicated on the packaging.
