In the heart of Auvergne, nestled at an altitude of 1000m in the volcanic regional natural park, the Fromagerie des Monts du Cantal has been perpetuating the tradition of raw milk cheese since 1928. It works with milk from the AOP Cantal zone and in the mountain collected from 40 producers in a sustainable approach respectful of the environment. What is more, the cheese dairy has developed a HAUT HERBAGE approach with specifications that are even stricter than those of the AOP Cantal (feed only grass and hay and certified noble supplements, collection within 24 hours, specialized and artisanal production: passage through the press volume, long maturation, aging in the cellar, selection, traceability ...). The cheeses are made in Pierrefort and matured in 3 cellars including the famous Saint-Poncy cellar built in a former railway tunnel.
